Recently I got into a heated argument1 with my friends after I made the claim that vegetables were not necessary, and may be bad for you. I was not able to defend my opinion adequately, having not studied much on the subject, but heard it talked about. I now would like to offer a Defense of Meat. I feel that though my opinion has sustained an Austerlitz, Napoleon will retreat from Moscow.
Our bodies need multiple things in order to survive: micro nutrients (vitamins and minerals) and macro nutrients (protein and fat). We have to absorb these nutrients through our diet. It may seem pretty simple: we eat that which has the most of these specific nutrients. It is not that easy, though. While you can see the foods highest in these things listed on the USDA website, this does not mean that your body absorbs it. The bioavailability of a vitamin or mineral is how much the body can absorb. It is much harder to find out the bioavailability of a vitamin. For example, you may know that Brazil nuts contain a high amount of manganese, which is an essential mineral. But nuts (being seeds, and therefore indigestible) are not a good source of nutrients. You will get more manganese in your system from meat.
This is something to keep in mind for this article.
Here is something else:
Vegan: no animal products
Vegetarian: no meat, may include animal products
The Food Pyramid: a lie the government told you2
Standard American Diet: may contain anything that isnโt weird
Carnivore: animal products only

Vegans
Of all the diets in human history, the vegan diet is the most elite and expensive. This may come as a surprise on first glance. But here I provide the proof.
On certain parts of the planet (a lot) there are certain times at which you cannot harvest fresh produce (because of the seasons which are determined by the slight {23ยฐ} tilt of the earth on its axis). While you could grow plants for certain times, others you would be unable to find anything to eat. You would starve.
Of course, if you were a smart vegan (donโt worry, you wonโt meet many!), you would have harvested your plants and preserved them in some way. You would be smart (for a vegan) but not smart enough. You would die of scurvy.
Scurvy, which is basically vitamin C deficiency, is cured, obviously, by the taking of vitamin C. But, as Nelson and his sailors learned (the hard way), it is critical that the food that you eat be fresh. Preserved plants would not help you much.
But, there is one other thing that would kill you even if you figured out scurvy: you would die of vitamin deficiency in general. Not only do plants lack essential vitamins such as B12, D3, and K2 (both varieties, which I will tell you about later), but they also have low bioavailability in others, such as A and K1.
So, I would not believe stories about all-vegan tribes living for thousands of years (I searched, and all I really found was an article on PETA about a Himalayan tribe that does that. I honestly donโt believe it. I may mention that PETA stands for People for the Ethical Treatment of Animalsโฆ no bias there).
But, you can live on an all meat diet.
All Meat Diets
Now for the meat of this article (in more ways than one). To set this up, I am going to provide some circumstantial evidence for an all-meat diet. This is not โscienceโ; more like lawyer stuff: what the โreasonable manโ might think.
First, unlike with vegans, there are examples of tribes surviving and thriving off of an all-meat diet. Dr. Georgia Ede of Diagnosis:Diet has an article on the History of All-Meat Diets. One of the more well known ones are the Inuits of Alaska. Being in a place where they could not grow much, it was essential that they lived off of local wild life, and they did. Cancer was never heard of till recently, with the introduction of processed foods.
This leads me to my second point: there are places in the world where humans have lived, and have not had year-round access to fresh plants. How can plants be necessary if I canโt find them? God made the earth with places that have animals without plants, but never plants without animals.
This is all fine and dandy, you might think, but where is the real proof? Canโt I sight studies? It turns out that I have studies showing that every vitamin and mineral can be found in some meat. Here they are.
Vitamins
There are 13 main vitamins the body needs:ย
Vitamin A
Vitamin B (there are 8 B vitamins: 1, 2, 3, 5, 6, 7, 9, and 12)
Vitamin C
Vitamin D
Vitamin E
Vitamin K
All these can be found in meat (here and here), vegetables do not contain some (B12, D3, and K2), and the others that they do contain are often โhard to get toโ or have low โbioavailabilityโ. A true vegan would suffer mental illness from vitamin deficiency (here and here).
One thing also to keep in mind about vitamins is that you can take too much, and either absorb too much of it, or waste a bunch. Additionally, the rest of your diet could affect how much of a certain vitamin you need. It is all context.
Vitamin A cannot be found in vegetables at all, what you do get is something called a carotenoids, which your body can convert into vitamin A (here). You can find evidence of vitamin A in meat here, here, and here.
The B vitamins can also be found in meat here, here, here, here, here, here, here, here and here.
Vitamin C is very interesting. Vitamin C deficiency results in scurvy. We are told that if we eat enough orange juice, and other citrusy fruits, we will get enough vitamin C to prevent or completely cure the disease. This, though, is not necessarily true. First of all, the emphasis is not on the citrus but the freshness of the food, Nelson found out (or rather, never did find out) that fresh seal meat is just as effective. You in fact donโt need a lot of vitamin C to prevent scurvy (about 10 mg/day). Humans have the ability to โrecycleโ vitamin C that is absorbed (here). There has been conjecture on how the Inuits of Alaska got their vitamin C (here), seeing that they did not have a lot of plants way up there. This article on scurvy also talks about the ways they found to cure it over time.
Calciferol, or vitamin D, is another vital vitamin for our vitals (vita is the latin word for โlifeโ). There is evidence of vitamin D in animals here and here. As I have mentioned above, vitamin D3 is not found in plants at all.
Vitamin E, like vitamin C, needs context. First, Vitamin E provides antioxidants that fight off oxidants in our body, which promote things like cancer, aging, and chronic disease. A lot of this โoxidationโ comes from carbs and sugars. Vitamin E protects us from the oxidation. A high-carb high-sugar diet needs more vitamin E, a low-carb low-sugar diet needs less. Second, vitamin E is a fat soluble vitamin, which means that it is stored in our liver and kidneys. Fatty meats provide a sufficient amount of vitamin E for a low-carb (healthy) diet.
Vitamin K is also a fat-soluble vitamin. K2 is actually not found in vegetables at all. Though K1 is found primarily in vegetables, this and this study shows that a version of K2 (MK-7) is more bioavailable and remains in the body longer than K13. You can find out that the other โregularโ version of vitamin K2 (called MK-4) can be found in meat here, here and here.
Minerals
Minerals are also essential micronutrients for our body. Here are the essential ones (I have included links giving evidence that they can be found in meat):

THIS was also interesting; Potassium (THIS study from 2016 calls for a greater understanding of the bioavailability of potassium in foods. The only food studied has been potatoes.); Chloride; Phosphorus; Magnesium. The other minerals: Phosphorus; Iron; Zinc; Copper; Manganese; Iodine; Selenium; Molybdenum; Chromium; Fluoride (I just read a BOMBSHELL from the Weston A. Price Foundation about this. Did you know that we first started to produce fluorine for refining uranium!); Sulfur; Cobalt; Choline.

Additionally
Here, I might add, that it is pretty evident that meat contains sufficient fat for fuel and protein for muscle, so I wonโt spend too much time on this.
So, meat is nutritionally complete. The ultimate super food. But that does not mean that I shouldnโt eat vegetables as well, right? I have something to say about that as well.
Why we might not want to eat Vegetables
This is probably the boldest claim yet. I think that the last part was harder, but this is definitely more interesting. It stems from the idea that meat is dead, while plants are alive.
It is interesting to observe that the most basic diet is meat and water. Basically anyone can have it, and have no problems. Mikala Petersonโs is one example of someone on a diet of mostly beef and water. If you want a diet that is easy to digest, you eat meat.
Part of it comes from the fact that meat (or rather, the animal) defends itself physically, while plants defend themselves chemically.
The basic elements of a plant are it roots, stalk, leaves, fruit, and seeds. All vegetables come from the first three elements. These are the essential elements to the basic survival of the tree: if they are not there, no tree. This is why they are specially protected. This is where I need to talk about dietary fiber.
We are told that fiber is essential to our health, that we need it for our digestive system. What people I donโt think realize is that fiber is itself indigestible. It is structured in such a way as to prevent our body from breaking it down. The hope, when you take fiber, is that it will literally โpull downโ the stuff your body has been unable to digest (the vegetables, and processed โfoodsโ, basically). The plant doesnโt want you to consume itโs fiber. The animals (like cows and sheep) that consume the fibrous parts of the plant have digestive systems designed to break it down. The fiber your body is able to break down in the stomach turns into gas, which has only one (undignified) way to go...
โYou eat what you areโ
Think of it this way: you eat what you are. If you were to cut open your arm, you would not find any fiber. You would find meat. My opponent might say โYes, but if you cut open your meat (the cow), you donโt find hay, grass, and bugsโ. That is true, but those animals, cows and sheep, do not only have special digestive systems, but also eat constantly, in order to get all the nutrients they can. More on that laterโฆ
Back to plants: the vegetable elements are not meant to be eaten, and are therefore made out of fiber. The plantโs seeds are somehow contained in the fruit. The fruit is sweet, soft, and easy to digest. The seeds are hard (made out of our favorite: fiber) and difficult to digest. The plant โwantsโ you to eat the fruit and let the fibrous seeds pass through your system into the ground to germinate and become new plants. Think God planned it that way?

It is also interesting to look at the digestive system (from teeth to tail) of various animals. Here is one comparing a man to a wolf to a sheep:
As you can see, while we act like omnivores, we are made (at least digestively) like carnivores. Sheep and cows are constantly eating on hillsides and pastures while we (like wolfs, lions, and other carnivores) move about and do things. We are not made to graze.
I might also add (for the Bible scholars) that there are no mention of vegetables in the Garden of Eden, which people point to as a reason to eat the veg. The curse that God gives never mentions having to grill steak, but to till the land. You could also argue, in the case of Daniel and his companions living on only vegetables and water, that it was because they were following Godโs will (not eating defiled food) that they were healthy. The eunuchs of the court were all worried that they would be unhealthy.
But, on the other hand, what is the food that people in the Bible always party with? Meat. Abelโs offering to God, the Covenant of Abraham, the lamb at Passover, and Elisha and the oxen. Not to mention the thousands of offerings of animals in the Temple at Jerusalem.
Before I finish, I would like to say a few words to introduce you to lectins.

This is a very interesting area to look at. Above, I talk about how, since vegetables do not have claws, etc., they have to defend themselves using chemical means. Lectins are some of their deadliest weapons.
Basically, lectins are natural pesticides.
Lectins are found in heavy concentration in seeds (that is, grains, beans, and nuts). They help protect the seeds from being eaten by predators likeโฆ us. They work by latching onto healthy cells to prevent them from communicating and producing energy and nutrients for the body. This triggers a response from our body, and can result in our immune system attacking their own cells to get rid of the lectins.
The diseases that arise out of this are called autoimmune diseases. Examples of this are Lupus, Type 1 diabetes, multiple sclerosis (MS), Crohnโs disease, and rheumatoid arthritis.
Some of the most common lectins are found in wheat. This lectin is called gluten. Gluten intolerance is another autoimmune disease. It is thought that โThe ability to tolerate gluten is now commonly seen on a spectrumโ4, which is basically from a little bit to stuff like Celiac disease.
What is even more disturbing is that these lectins are being increased in plants by genetic modification (GMO). Since lectins are great pesticides, farmers like to strengthen them to keep the pests away. You can guess what happensโฆ we get more toxic plants.
Another disturbing thing is that farmers have been strengthening these plants to resist the product in Roundup, so that they could spray their crops with it, and the crops will not be killed. Sounds like a bad idea to me.

What is the advantage of grains?ย
High in fiber (if you read the previous section, you would know what I say about that).
High in nutrients (I also spent a whole section talking about nutrients in meat, and low bioavailability in plant-based foods)
Prevents diseases (These studies talk about high carb/sugar diets and diseases such as rheumatoid arthritis, liver disease, obesity, cardiovascular disease, and more. We have also mentioned that various autoimmune diseases are caused by high-grain diets, such as celiac.)
So grains (and vegetables in general) are not so all-fired great as the government (or cereal companies) would like us to believeโฆ
In Conclusion
To wrap this up, I would like to answer the one argument that stumped me for a little bit: vegetables bring beauty to food; that all beautiful foods contain the bright colors of fruit and vegetables. Here is my answer:
